Cashew ‘cream’

INGREDIENTS:

  • 3/4 cup raw cashews (soaked overnight or in boiling water until soft)

  • Juice of 1/2 lemon

  • 1/2 cup filtered water

  • 1/2 tsp apple cider vinegar

METHOD:

In a food processor or blender, mix together all ingredients until a thick and smooth consistency has formed.

NOTES:

If you haven’t pre-soaked your cashews overnight, soak in boiling water for at 10 minutes, until softened.

This is an awesome dressing, replacement for sourcream, cheese, dip, anything really!

You can also add garlic, onion powder, herbs, nutritional yeast, paprika etc to change up the flavour! You can also play around with the amount of water - the less you use the more textured it will be.
